Hey everyone, 

Today I want to talk about travelling sustainably and ethically, since I think these are two of the most important things if you want to keep travelling and enjoying cultures/natures. 

So much can be learnt through travelling. It is meaningful and wonderful and gives us the opportunity to explore other ways of thinking, other cultures, other perspectives on things and not to mention a great variety of beautiful ecosystems. It is easy to assume that the way we do things here is the right way, that how we live, is how it should be, but travelling can totally mess this idea up, in a good way :). However, tourism can also put great stress on other cultures and ecosystems. Whole societies can change and disappear if tourism is performed in an unsustainable way. In this day and age in which travelling is so popular, easy and cheap, it is therefore very important to travel sustainably to sustain a place and its character. 

So what makes travelling sustainable? Many ideas and opinions exist about this, but I think it comes down to focussing on these things: respect, ethics, eco-tourism. Again, these terms can be interpreted in multiple ways of course haha. 

Respect is one of the main things if you want to be accepted into a culture, but also preserve a culture. Respect begins with researching the country you're visiting. This means looking into the culture, the rules, the unwritten rules and sometimes even the language if you're up for it. Getting to know a culture before you see it (by reading, watching movies/documentaries, researching the internet) can already increase your respect for it. Even though you might already think you are respectful, understanding exactly what and why will help you to act on it even better! And, it's also great fun to know so much about a culture. You can talk to local people about it, or explain things to other tourists which in turn helps them to travel more sustainably as well. 

Being respectful and being ethical has a lot in common. However, being ethical to me means that you are aware of what you do and how you do it, and that you really try to limit any negative impact you can have on cultures/environments. This means that for everything you decide to do, you do some research on how, why, where and by whom. So if you want to visit a local village for example, how is the trip conducted, what are the real reasons behind the trip (making money or supporting the local industry?), where are you going (what kind of village is it? Are they real local places, or are they places set up for tourism and making money?) and who is conducting the tour (is it local, what do they spend the profit on? etc). Of course, some of these things are really difficult to find out, but by trying to dig deeper than just booking the first cheap option, you might really have a positive impact on local cultures and help in preserving them. The same can be important for animal/wildlife shelters. 

Ecotourism, a term defined by the World Conservation Union as "Environmentally responsible travel to natural areas, in order to enjoy and appreciate nature (and accompanying cultural features, both past and present) that promote conservation, have a low visitor impact and provide for beneficially active socio-economic involvement of local peoples." As you can read In ecotourism a big part of the money made by tourism is usually put into conservation practices, like tree planting, preserving lands or helping animals. This goes hand-in-hand with cultural conservation. It's all about minimising your impact on the environment and being aware of what you can do (through tourism) to preserve the country you're visiting. Again, you can do research on the impacts of certain things you want to do. You can also find out which place you should and shouldn't visit by reading reviews for example. For example in Thailand, elephant riding can be a very popular activity for tourists, but it is terrible for the elephants. If you do want to see an elephant though, or maybe even be super close to one, you can visit an animal/elephant shelter where the elephants live that were rescued from these terrible circumstances. Often, you can also volunteer at these places which helps them in taking care of the animals and sheltering more animals.

Well, I think it's all about pre-reading, which is also a fun way to prepare for your travels. Learning about a country can help you in making sustainable decicions. In 2019, it's hard to ignore thinking about how your consumption choices affect the world. While you're probably familiary with the bad impacts of flying, the meat and dairy industry and the plastic soup that we call oceans, the textile industry hasn't entirely made it's way into the spotlights. 

A couple of months ago I saw the documentary "Stacey Dooley Investigates: Fashion's Dirty Secrets". While I was aware of terms like sustainable fashion, I had never been presented with the blunt facts or shocking images that come with it, nor had I tried to read into it. The fast fashion industry comes at a huge cost to the environment; water pollution, toxic chemicals, fashion waste and transportation costs. Furthermore, the water footprint of fabrics like cotton, and even more shocking, organic cotton, is huge. And while we are on the safe-side of the fashion industry (for now...), millions of people are suffering from the fashion choices we maken. 

Fast fashion is an industry focusing on low costs and speed. In reducing the costs for clothes, companies often choose for the cheapest countries with little (enforced) rules on environmental impact. The vibrant colours you love so much in your clothes, are often created with the use of toxic chemicals of which the residues end up in rivers and oceans, making this practice the second largest pollutor of clean water, following the number one we're all aware of; agriculture. By making such choices, fashion companies can constantly provide new collections at low costs, and the consumer is presented with cheap attractice new options all the time. In turn, this has caused a high-turnover of clothes in people's closets. Whereas in the past you used to have the same trousers for years, now you might have worn them 5 times before buying new ones and sending these to the second hand shop, hence the increasing amounts of textile waste. 

What can you do?

I was shocked by what I saw in the documentary and it totally changed my view on fashion. I'm not the only one, many blogs can be found on the internet regarding sustainable fashion, or even cutting out clothes shopping as a whole (check out this girl who didn't buy clothes for a year). While the latter option is something I might consider as a new-years resolution next year, it's a bit difficult with my upcoming trip and my lack of outdoor clothing. Therefore I have found some other ways to reduce my environmental fashion impact, which I would love to share with you. 

First of all, the number one rule is buy less. It's a simple solution to a big problem, buying less means less waste, less chemicals, less transportation, less water use etc. This is immediately connected to the second thing: buy recycled and good-quality. Recycled clothes are often the best as little pressure is put on virgin resources used for new clothingBuying good quality means the clothes will last longer and therefore again, you'll also have to buy less. However, not all good quality fashion is sustainable, so make sure to look at the brands. 

Since this blog is about outdoor brands, I want to give you a list of brands that from most sustainable to least sustainable based on the amazing website "rankabrand.org". 

Vaude 
Vaude scores the highest in the list of outdoor brands and therefore achieves a B-label. This is due to their use of 100% green electricty, their policies regarding toxic substances and their waste and packaging management. Furthermore they are a member of the Fair Wear Foundation. 

Jack Wolfskin
Jack Wolfskin is assigned a C label. They have implemented several measures to reduce their greenhouse gas emissions and work with organic cotton and certified manufacturers. However, they are not entirely transparent about their practices and therefore many impacts remain unknown. 

Fjällräven & Patagonia
Even though I've repeatedly been told Patagonia is one of the most sustainable brands, both Fjällräven and Patagonia score a C-label as well on the rankabrand website. Since the website uses a strict set of criteria, if the brand is not transparent about this, or does not publish results on their impacts, they score rather low. 

Other C-labels are assigned to Pyua, Trigema, Schöffel, Norrona, Deuther. Furthermore, D-labels are assigned to Bergans, Burton, Icebreaker, Regatta and Millet

When looking at a review of the fair cottage websiteVaude again pops up as the top sustainable choice, followed by Houdini and La Sportiva. 

The Greenpeace campaign "detox our fashion" on the use of PFCs (long-term severe pollutants) also gives an overview of the big outdoor brands. Their detox champions are again Vaude, and Paramo and Rotauf. The brands that are moving towards becoming more sustainable but that are definitely not their yet are The North FaceHaglöfs, Black Yak, Jack WOlfskin, Mammut, Salewa and Norrona. The brands that score the worst are Arcteryx, Columbia and Patagonia. While they mention that Patagonia is one of the leaders in sustainability, they are definitely falling short in their detox from PFCs. 

Interestingly, an independent website, theprch.com, puts Patagonia as the most sustainable brands out of a list of outdoor brands. Patagonia is refered to on many websites and in many articles as one of the most sustainable brands due to, for example, their focus on recycled fabric. While they score the highest on theprch, the website does mention that they are far from perfect and not very transparent. However, they do provide a lot of information on how they try to reduce their impacts, while many other companies hardly make any efforts at all. 

Patagonia is followed by REI, which has a B score. In the D category, the North Face, Mountain Hardware, Mammut, Marmot, Columbia, Black Diamond and Arc'teryx are listed. The worst brands, according to this list, are SmartWool, Sea to Summit, Osprey, Big Agnes, Coleman, Exped, Five Ten, Granite Gear, Gregory, Kelty, KUHL, MSR, NEMO

All in all it seems that Vaude is definitely the most sustainable brands. Whether Patagonia follows, I'm not sure. They mentiion that they try to do a lot to be more environmentally friendly, but they lack actual reporting and therefore score quite low. Furthermore, they are not active in reducing their PFCs. I think it's best to buy products from Vaude, look into what products you buy from B/C categories, and definitely avoid the brands with a B-label. If one of your brands is not in the list, you can request RankaBrand to review it through this page. 

Last of all, I want to mention the option of second hand clothes. While it can be tricky with outdoor clothing, there are still plenty of options to find good clothes. Check out second hand (outdoor) shops, people selling clothes on the internet, shops, or even brands selling used clothes (https://www.rei.com/used for example).

4 tips for sustainable travel products

As you might have noticed, lately I've been trying to figure out how to live more sustainably. However, while I'm getting better at it at home, my travels could do with a sustainability upgrade as well. Therefore, I've been gathering some tricks I use at home, that could also be used for travelling. 

1. Get a safety razor
This is definitely one of my favorite lifestyle changes and it could easily be used for travelling as well. I have been using disposable razors for so long, and never really thought about how damaging they are for the environment due to packaging and all the plastic used for the razors themselves (I'm not even talking about production emissions etc). Recently I saw a post somewhere about a safety razor, which made me wonder whether this would be a good alternative. It turns out, many people before me have asked the same question and hundreds of blogs are written about it. Great! So after reading some experiences of other bloggers, I decided to buy one. Without putting too much effort into it, I choose the "Feather safety razor populair" at https://www.thealphamen.nl/feather-safety-razor-populair-2-mesjes.html which costs 20 euros and comes with 2 blades. I didn't want to spend too much money on one in case I didn't like it, but in hindsight, it would have been better if I bought a safety razor that was 100% metal and maybe a little bit more expensive. 

I'm very happy with my safety razor (maybe I'll write a whole blog about it sometime as well..). I was a bit scared when I used it for the first time, because it's such a sharp razor and a new experience, but this turned out to be totally unnecessary. It's super easy and it's so much better than disposable razors with 2,3,4,5 blades. You can use the razor everywhere (just be a bit more careful in sensitive areas), and you really get a clean and good shave which lasts much longer. For a sustainable shaving cream, especially when travelling, it's easiest to have a soap bar with you, or some coconut or olive oil. This works really well and is super easy. You can just bring a bit of oil with you on your travels and only use a little bit every time you shave. 

By the way, the disposable razor blades last about 1-2 months depending on how often you use it, and are recyclable. 

2. Rice water hair boost
One of the things I really dislike when I'm travelling, is when my hair gets dry. Certain climates can be really tough on your hair and damage it, and usually spending much time on revitalising your hair is not a priority when travelling. So recently, I found out about an easy trick to give your hair a little boost, and it can be done almost everywhere! 

What you do is you boil rice with 1.5 or 2 times the amount of water you would have actually needed for cooking the rice. When it's finished you drain the excess water and keep it separate. Let it cool down until it's colder, cover your hair and scalp in it (for example by putting the water in a bowl and dipping your hair and head in) and let it sit for about 15-20 minutes. Then rinse it out and your hair will be super soft again! 

If you use conditioner as well, do this after conditioning - You can also mix the rice water with green tea to make your hair more shiny - if you have too much rice water, store it in the fridge so you can use more later - you have to figure out yourself how much to use it, I think most people say once a week/two weeks/month. Or you can just use it whenever your hair feels like it needs a boost. 

3. Bring a water bottle and/or sustainable cup with you on your trip
Just like at home, you can bring your own water bottle or coffee cup when you go somewhere. This can safe millions of plastic or paper alternatives. Always ask people to use your cup for a drink your ordering, and fill your own bottle with water. A Stojo cup (https://stojo.co/) is a very good option for travellers since it is foldable and therefore takes up less space in your bag. 

4. Bring your own chopsticks
Okay, maybe this one doesn't count for all your travels, but mainly relates to travelling in south-east Asia, but it really helps save on wooden products. I have experience travelling in Japan and everywhere you buy some food, you get disposable wooden chopsticks in plastic packaging. Imagine saying no to all of these and just using your own chopsticks? It's so easy! I think on the worst days I could have saved over 8 pairs of chopsticks if I did this, and that would be only in one day. So from now on, I'm gonna bring my own and say no to the disposable ones :). 

These are just some simple tricks and tips for more sustainable travels. There are lots more to be found on the internet and more blog posts by me will follow in the future as well. I booked a flight, now how do I compensate?

Alright, I did it! I booked a flight to Japan because of a job interview (they didn't want to do it over skype because I should get to know the company). I couldn't pass the chance for something I always wanted to do, so against my own moral judgement I'm going to Japan for 2 weeks in August. However, since I'll be adding an enormous load of CO2 and other gasses into the air, I want to find a sustainable and ethical way to compensate for this. Let me take you with me in this quest, so maybe you can use the info too!

~reminder, NOT flying is ALWAYS better than compensating! ~

Nowadays, many airlines offer flight compensation. However, I'm not to keen on compensating through an airline company since I don't trust them too much and I think they probably go for the easy options. So I decided to arrange my own compensation, starting with finding out how polluting my trip would be. 

1. Calculating emissions
I read about flight pollution. Flying is not just about adding CO2 to the atmosphere. Science has pointed out that there are many more detrimental effects of flyings, the biggest ones according to Atmosfair are "The CO₂ as a direct by-product of combustion, the formation of cirrostratus clouds and/or contrails (linear clouds), the formation of the greenhouse gas ozone in a sensitive level of the atmosphere, and the cooling effect of methane decomposition". If you want to know more about this, then check out their page https://www.atmosfair.de/en/air_travel_and_climate/flugverkehr_und_klima/climate_impact_air_traffic/ The table can be a bit confusing, but it shows that for example ozone formation because of flying is almost as polluting as the CO2 (80% effects of the same amount of CO2). The effects of flights on climate change are usually much higher than only shown through the CO2 values. Therefore I also don't trust big aviation companies, since they probably don't take this fully into account.

Then, there is another very useful tool which can be found on the atmosfair website, namely the airline index (https://www.atmosfair.de/en/air_travel_and_climate/atmosfair_airline_index/). If you click on the latest document, you can see how well the airline you're flying with scores. I'm rather dissapointed and I should have checked this before I booked, since my airline is in category D, which is not very good. When scanning through this document (tip: use ctrl+f) keep in mind that the airline scores differently for different distances. I would recommend you to definitely check out this website before you book a flight! oops.. 

The third tool, from the same website, is the flight emission calculator https://www.atmosfair.de/en/offset/flight. Of course, they can't take into account everything like the weather on that day, or the amount of luggage etc etc., but at least you can get a good idea about how much you should compensate. In my case, and I'm afraid to admit it, I have to compensate for 5515 kg of CO2, which costs me 128 euros. They also show a comparison to other emissions, which is quite shocking. The average per capita emission in India in one full year for example is 1600 kg CO2 and the total amount of emissons I could spend in one year to retain a healthy climate is 2300 kg, which is less than half of what I am emitting through going to Japan for two weeks... and I'm not even talking about my other ways of emitting CO2 now.. (like electricity use, food, garbage etc). So yeah, I feel terrible, but at least I can do a little bit to compensate for it now. 

2. Finding compensation
So, let's focus on something positive: how can I reduce my gigantic amount of global warming contribution? I have googled with the terms ethical and sustainable CO2 compensation since not every compensation scheme is a good one. A while ago for example, I watched a zembla episode (https://zembla.bnnvara.nl/nieuws/het-co2-alibi it is in Dutch, sorry) which talked about CO2 compensation through planting trees on other peoples land in Uganda, a terrible thing. After my search I found three websites that seem good to me: https://climatecare.org/projects/ (a certified B corporation), https://greenseat.nl/ (which is gold standard certified) and https://www.atmosfair.de/en/climate-protection-projects/ (which is also gold standard certified). Compensating through atmosfair is easy, since you can just use the calculation tool, and then click continue which will give you the option of choosing projects followed by a payment. 

If compensating thorugh Greenseat you can do the same, however, they will give you a much lower price (for me around 17 euros) and I think this is because they only count the CO2 emissions and also don't take into account what type of plane you use. So I would prefer atmosfair over greenseat because they seem to be more inclusive about all the other ways of airpollution. 

Climatecare also has some great projects. Through their calculator tool https://climatecare.org/calculator/ you can do the same as with the other two options. This calculator gives me a price of 23 pounds, which is higher than Greenseat, but much lower than atmosfair. You can check the option of compensating for 10% more, but this is still a lot less than 128 euros. Therefore I am more prone to compensate through atmosfair since I believe they are a trustworthy organisation and try to really compensate for everything, even though it is much more expensive. However, I do still think the other organisations are also good! 

Well, now I'm going to sleep on it for a night and ask a friend of mine who recently compensated for his flights for some recommendations and then, when I get my internship compensation I will start compensating! I feel a bit better now since I now that I can partly reduce my emissions :). Of course, I'm not a business person who flies a couple of times per year/week/month, but even my emissions matter and every small step of reducing them helps!

Travelling and the climate: what you could and shouldn't do

Climate has been on the forefront of international negotiations in the past decades. The evidence of human-induced climate change and its consequences is abundant and ever increasing. While states are delving into seemingly never-ending negotiations, citizens and other non-state actors are increasingly acting on reducing emission through all kinds of easy and more inventive ways. One contradicting issue rises, however; the increase in welfare in combination with decreasing flight prices is causing a boost in international aviation numbers. While I am trying to be a person who lives in a sustainable way, I have to admit that I am also one of the people contributing to air pollution by flying to Japan, Ecuador, London, etc. I find it difficult to come clean with myself about how much I am polluting through my travels, especially since this is one of the things which makes me truly happy. I became vegan for the environment, I take very short showers, I stopped using shampoo, I try to buy local products mostly, but then my flight just compensate for more than everything I am trying to contribute. Therefore, in this blog I want to write a bit about sustainable ways of travelling, to make myself more aware, but also to maybe help you if you're struggling with the same contradicting lifestyle. 

While there is so much knowledge about pollution and travelling I will not claim to use everything here. That would just be way too much to cover in one blogpost. I will, however, look at trustworthy pages and share them with you (some might be in Dutch, but I will summarize what they say here). First of all for example, the Dutch website www.milieucentraal.nl, an organization focussing on the environment which was started by the former ministry of environment in 1988. They have a page called 'Vliegen of ander vakantie vervoer' which means 'flying or other ways of holiday-travelling' (https://www.milieucentraal.nl/duurzaam-vervoer/vliegen-of-ander-vakantievervoer/). On their page they give a simple comparison of the pollution caused by different ways of travelling. Visiting the page can be useful even if you do not understand Dutch since they show some figures you might understand. They give four tips, useful to keep in mind when planning your holidays: 

  • Go less often on holidays, but go for a longer period of time
  • Travel by train or touring car to reduce your contribution to pollution
  • Choose a suitable destination close to home, so if you want to a sunny place to lay on the beach and tan, go to Portugal instead of South America for example. You can do the same and you can seriously lower your environmental impact. 
  • Compensate for your pollution by investing in sustainable energy or tree planting (however, make sure you choose the right project for planting trees, since they are not always very socially sustainable since the trees might be planted on other peoples bought territory in African countries for example). 

They also compared several ways of travelling within Europe with the first one being the most sustainable: train/touring car, car with multiple people, airplane or car with only one person. However, they say you have to keep in mind the type of car your travelling with, since some are more sustainable than others. A trip by plane is usually around 7-11x more of a burden on the environment than a trip by train. 

If you do decide to fly, however, then you can at least try to reduce the impact as much as possible by keeping in mind the following things: 

  • Most of the times a direct flight is the best. For long intercontinental flights, however, this might be different. 
  • Fly with an aviation company that uses modern planes and that cares for the environment (check their website for example or call the company)
  • Flights of companies trying to be as cheap as possible might be more sustainable than more expansive flights since they try to fit as many people in the plane as possible. However, they should then use modern planes. 
  • Again, choose a good destination close to home
  • Travel by public transport to and from the airport 
  • Compensate!

The Guardian also released an interesting article about the impacts of flying. The article is from 2008, so a long time ago, but you can get the idea: https://www.theguardian.com/environment/2010/apr/06/aviation-q-and-a . One of the important things they mention is that the impact of flying is not just about CO2 emissions, since this is not the only impact flying has on the environment. The contribution to global warming is often much higher than what you expect only based on CO2 emissions. 

A relatively recent article in The Times (https://www.nytimes.com/2017/07/27/climate/airplane-pollution-global-warming.html) also stresses how bad flying is for the environment. However, they again give some recommendations to keep in mind

  • Fly less
  • Offset it
  • Fly coach
  • Listen to flight attendants (they sometimes give some hidden fuel saving tips)
  • Know your fuels

So what now? 

Well, I am still in doubt about my next trip and definitely more aware of what I should and should not do. Now I at least know how I can reduce my impact if I decide to keep travelling by plane, which I am honestly not yet ready to totally give up. I am focussing more on other modes of travelling however. Especially travelling by train has caught my attention since you see so much more of the country then by flying, and since it's effortless in comparison to driving or biking. For example: I would love to go to China, and one way to do this and at the same time see so much of other countries is by taking the Trans Mongolian Railway for example. There is also the Danube Express in Europe (which is more of a luxury train), the Ghan in Australia, the California Zephyr in the USA, the Golden Eagly (Moscow-Tehran). The Telegraph also gives a great overview of train rides in the world https://www.telegraph.co.uk/travel/rail-journeys/the-25-greatest-train-journeys-in-the-world/. While it might take longer to travel by train, it is worth it when you decide to take fewer but longer trips. Other ways of travelling are by foot, bike or boat.

Did you know that there are areas in which you are not allowed to use regular sunblock? In Mexico for example, there are several marine parks (Cozumel, Chankanaab, Xcaret, Xel Ha, and Garrafon) where you can't swim while wearing regular sunblock, so you'll need an alternative. 

So why are you not allowed to wear normal sunblock? Sunblock, just like other body products, contains a lot of chemicals. Some of these chemicals such as oxybenzone (sometimes listed as benzofenon-3 or bp-3) (which can also have a bad impact on human health https://www.ewg.org/sunscreen/report/the-trouble-with-sunscreen-chemicals/#.W0-AgNIzbIU). Because of its toxicity to the algae living in symbiosis with the corals, oxybenzone disrupts the normal cycle of corals and can therefore cause changes in their reproduction and growth. A laboratory study showed that even in minimal concentrations of sunblock, already resulted in viral infections which could lead to coral bleaching (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC2291018/). And not only wearing the sunblock in the water results in pollution, also washing off sunblock in the shower and using sunblock spray on the beach can be very detrimental. 

Many coral reefs are currently at risk of bleaching, one of the most well-known being the Great Barrier reef. Since coral reefs provide one of the major sources of biodiversity in the ocean, it is very important to keep them intact. Therefore there are some options to reduce your impact and to be able to swim anywhere. The best is, of course, to not use any product. However, it is important to protect yourself against the sun. Here you can see a list of harmful ingredients that can be in sunblock. So you can look for one that doesn't contain these ingredients. It is hard to find coral friendly sunblock on the internet, but one sunblock I know of is Sovee. Abroad you can find many sunblocks stating they are eco-friendly, however, I recommend to not always trust these labels but really check the ingredients. And in places where you can't swim without coral-friendly sunblock you can be sure that you can buy it somewhere.

5 vegan and vegetarian restaurants in Kyoto

If you're a vegetarian and have been to Japan, you'll probably know that finding vegetarian, let alone vegan, food is quite a challenge. If you haven't been to Japan, now you know... Most dishes contain meat or fish, and even if they seem vegetarian, they often hide some fish stock, bonito flakes or other type of broth that was used to cook something in. However, it is not impossible to eat vegan or vegetarian when in Japan (I did it for 7 months), but you'll have to be up for a challenge. 

For this blog edition I'll write about my experience with vegetarian food options in Kyoto, however, these places will often also contain vegan options. I will list some of my favorite food options and places in Kyoto below. 

1. Mumokuteki
Mumokuteki was definitely my number 1 vegetarian restaurant in Kyoto. They serve healthy traditional Japanese dishes and it all looks amazing. Furthermore, the atmosphere is great in the restaurant too. Keep in mind that not all options might be vegetarian (or vegan), but despite of that, you won't have a problem finding something that suits your taste here. Also, don't hesitate to ask about they ingredients, they will help you out! For desert I can highly recommend the dandelion 'coffee', it's made from dandelion roots and tastes amazing.

2. Ain Soph
This used to be restaurant Matsuontoko, but they recently changed the name to Ain Soph. While they were previously a hamburger place, nowadays they serve all kinds of healthy dishes and everything is vegan, so it's perfect if you don't want to worry about that. If you're up for some good-looking, healthy food, definitely check this place out! Fortunately their website is partly in English if you want to check the menu before you go!

3. Miyakoyasai Kamo
Miyakoyasai Kamo is a great restaurant if you're into Japanese style veggies. The restaurant offers a buffet with dishes made from all kinds of local vegetables. It is therefore also sustainable, since the veggies come from local farmers. It is open for breakfast, lunch and dinner and offers a variety of fresh, healthy dishes. Since it is not clear which dishes are vegetarian or vegan (not all of them are), I recommend bringing a Japanese speaking person or to bring a little note like this: http://justhungry.com/japan-dining-out-cards

4. Veg Out
Veg Out is a restaurant that combines both a great view of the Kamogawa river and a relaxing atmosphere. They work with local farmers who put great care into their products. The food here is a mix of all kinds of dishes from nachos to buddha bowls.

5. 千丸屋 〜京湯葉老舗〜
This place is the best to eat the most amazing local kyoto tofu. Kyoto is known for its tofu traditions and there are lots of places that offer tofu/buddhist cuisine. This restaurant is a good place to try yuba, really thin tofu sheets. They are so so so delicious and I would really recommend you try it out if you want to try some local tofu. Arepas are corn pancakes/bread that can be eaten in all kinds of ways. If I understood correctly, arepas are mostly eaten like a kind of sandwich in Colombia (so cut open the arepa and put stuffing inside), while in Ecuador I mostly got it as a kind of thick pancake with other things on top. 

Since I am vegan I try to find food that fills me up and gets me through a day of walking and sightseeing. This arepas recipe is perfect for this; it is super easy, very filling, healthy and most importantly super delicious. Of course, you can adjust the recipe to your liking, but here is the recipe the way I like it: 

Ingredients for one/two people: 

Arepas: 

  • 1 cup arepa flour (in the Netherlands I can only find P.A.N. but other brands are masarepa and harina blanca. Just look for 'pre-cooked corn flour' and if you're in a Spanish speaking country just say 'harina para arepas?' which means 'flour for arepas?' and they will help you. 
  • 1 1/4 cup warm-hot water 
  • Pinch of salt
  • One Tbsp vegetable oil (sunflower)
  • Optional: other ingredients to add to the bread (I often add garlic or onion (small pieces) or paprika powder)

On the side: 

  • 1 can brown beans or kidney beans (400gr)
  • 1 can diced tomatoes
  • 1 small can of corn
  • 1 onion cut into small pieces
  • 3 cloves of garlic cut into small pieces
  • 2 diced tomatoes (optional)
  • 1 avocado (optional)
  • One tablespoon paprika powder 
  • Chili (optional)
  • Salt (optional)
  • Oil

1. Cut the ingredients that you want to mix with the arepa flour into small pieces. 
2. Mix all the ingredients for the arepas. 
3. Knead until you get a ball of dough. 
4. Let it sit for about 5-10 minutes. 

1. Cook the onions in vegetable oil for about 3-5 minutes
2. Add the garlic and cook for 1 more minute
3. Now add the can of beans, corn and can of tomatoes (optional: chili & salt)
4. Turn to low heat and let it simmer 

5. Now shape the arepa dough to 1cm thick pancakes. You can choose the size depending on what you prefer. 
6. Bake the arepa in a good non-stick pan with enough oil and turn over when the bottom is golden-brown (you can also semi-fry them by adding a lot of oil and adding the arepa when the oil is hot)
7. Put the arepa on a plate, add the bean mix and add some fresh avocado and tomato pieces

Plantains, or cooking bananas/green bananas, are everywhere in Ecuador! They can be recognised by their big size and if unripe, their green colour. The bananas are different from the 'normal' bananas you usually find in the supermarket. They have a higher amount of starch and less sugar and if I am correct, also contain vitamin B6, vitamin C and much potassium and sodium. When unripe, they are quite tasteless but when yellow, they become more sweet. For this recipe, we will use the unripe plantain which is also used for patacones, bolon de verde, empanadas de verde and chifles, dishes you can find throughout Ecuador. The recipe I will describe is very simple and can be made for breakfast (as an alternative for scrambled eggs for example) or for lunch/dinner in combination with veggies. 

Ingredients (2p, lunch):

Plantain dish:
- 2 green plantains
- 1 onion
- 2 or 3 cloves of garlic
- 1 tsp cumin powder
- 1 tsp paprika powder (optional)
- vegetable oil
- salt & pepper to taste
- water

On the side: 
- 1 avocado
- 2 tomatoes
- kidney/brown beans

1. Put enough water to boil for boiling the plantain.
2. To prepare the plantain you first need to rid it of it's peel. You can do this by cutting the corners down, and then peel of the rest of the peel. Or follow this video: https://www.youtube.com/watch?v=-5XW4iRSMcI
3. Cut the plantain in 5 pieces and add to the boiling water. Let it boil for 30 minutes, or until you can quite easily put a fork in it. 
4. In the mean time, cut the tomatoes into small pieces and cut the avocado into slices. Also cut the onion and the garlic into small pieces. 
5. Bake the beans in a frying pan. 
6. When the plantains are cooked, put them in a bowl and crush them with a fork until you only have small pieces (0.5-1 cm)
7. Heat up oil in a frying pan, when hot add the onion and bake for 5 minutes, then add the garlic for 1 minute and then add plantain, the cumin and paprika powder and bake until the plantain is golden-brown. 
8. Add salt & peper to taste. 
9. Put everything together on a plate and enjoy! :D 

You can basically mix this plantain dish (without the side ingredients) with everything. You can add it to soup, or in wraps, or well just almost anything! :)

It's RAMEN TIME! :D 

This is a Japanese ramen recipe that is delicious and suitable for everyone, also vegans. It is easy to make and you can create a different dish every time if you change the toppings. This recipe will give you the ramen stock, and some toppings I really like. In case you make the stock with mushrooms, add 1 hour to your cooking time. However, it's also delicious without the mushrooms! 

1. cut the tempe/tofu and put it in a bowl with a bit of soy sauce and garlic.

2. cut the garlic and ginger into small pieces and heat it in sesame or sunflower oil for about five minutes on low heating. 

3. now add the stock, soy sauce, mirin and if you use them, the dried shiitake or different type of mushrooms. Let it cook for about 5-10 minutes (the longer the tastier though), but in case you added dried mushrooms, let it boil for one hour before you continue with step 4. 

4. prepare the toppings (cut them into smaller pieces if necessary).

- heat some oil in a separate pan and bake the tempe/tofu. 

- boil some water in a separate pot, add the spinach for about two minutes, then drain the spinach with cold water. 

5. add the noodles and cook as long as necessary, then turn down the heat, add the miso paste and stirr well (don't boil when the miso paste is in). 

6. divide the stock and noodles over two bowls and add the toppings. I only use a little bit of pickled ginger in the middle because it looks very pretty but has a strong flavour. And you can sprinkle with sesame seeds. 

7. Enjoy

  • sesame oil (or sunflower will do too)
  • 4 cloves of garlic
  • 1 inch ginger
  • Vegetable stock (i used two blocks), so about 1L
  • Two tablespoons soy sauce
  • 1 tablespoon miso paste (usually white, but I used red and it was tasty anyway :))
  • 1 tablespoon mirin
  • about 150 gram ramen (depending on how hungrgy you are)
  • Optional: dehydrated mushrooms (shiitake)
  • Toppings such as:
  • tempe/tofu marinated and baked in a bit of soy sauce
  • 1 spring onion
  • 1 can of corn (200gram)
  • spinach (150-200 gram)
  • mushrooms
  • pickled ginger
  • sesame seeds
